Rice with spices
I'm sure it's possible to be lazier than I am when it comes to cooking, but this recipe is the pinnacle of the summer sweltering heat-induced lethargy which has made my daily life slow down to a sloth-like pace. Every so often, I crave something more interesting to my palate than the usual simple flavors of Italian cooking which prides itself on few ingredients to produce a...soliloquy of flavor. In these moments, I reach for my little tins from the Spice Shoppe in Notting Hill, and some good hot fresh red pepper. Because this whole grain rice takes a notorious long time to cook, I put it in the pressure cooker. While it's cooking, I saute white onion, red pepper, cardamom, star anise, cumin, and one of the four of five different garam masalas I have, or Ras El Hanout (I know that's not Indian!). If I remember, I put in a smashed clove of garlic also. After discarding the seeds, I mix a teaspoon or two of this with the rice, and the bits of onion and red peppers, and that's lunch... When I've gained a bit of energy, I include some diced eggplant or zucchine... But that's rare. Takes too much prep and too much clean up.
