Fried Rice

Making fried rice is easy, I think, and I like it because it's a quick way to use left over rice.  This isn't really a 'traditional' version because I don't know what that is.  I can guess it has shrimp or some sort of pork, egg, peas, and onion.  For one person, just use a handful of each ingredient, plus one egg.  I often add zucchine, boiled but firm, and some carrots.  I saute all the vegetables (onion first, then ham til crisp, then the rest of the vegetables in small pieces).  I move the vegetables to the side and then add the egg.  I pour it all over rice in a large serving bowl and mix well. This would also be good with shrimp in place of the ham, probably even tofu.  It's not rocket science...and it's good the next day reheated!
